The best thing about coconut cake is that it doesn’t require a lot of preparation.
All you need is a cupcake pan, a cup of water, a few ingredients and a few minutes of baking.
This recipe is one of the easiest to make, and you can even add some delicious toppings.
You will need:Coconut Milk (optional)1 cup sugar3/4 cup almond milk (or a combination of both)1 tablespoon of butter3 eggs2 cups of flour (or all purpose flour)1/2 cup of almond flour (not the powdered kind)1 1/2 cups (1 1⁄4 sticks) unsalted butter2 cups milk1 cup of cream (you can use coconut or almond milk)1 teaspoon of vanilla extract (or honey)Cocoa powder1 teaspoon cinnamon (optional, but highly recommended)Candy (optional – I use a variety of colors and shapes)2 cups coconut oil1/4 teaspoon of saltMethod:1.
Preheat oven to 350°F2.
Place the milk, sugar, almond milk, butter, eggs, flour, and almond flour in a medium bowl.
Stir together until the mixture is smooth and creamy.
Add the coconut oil, cinnamon, salt and vanilla.
Stir in the milk and coconut oil mixture until combined.3.

Place the cupcakes on the parchment paper.
