I love vegan coconut butter.
It’s the one butter I don’t use a lot of, but when I do, I use it sparingly and in small quantities.
But that’s about to change.
The avocado and avocado oil recipe you see below is vegan coconut buttermilk cake frostings that you can make at home and freeze, reheat, and bake in a pinch.
They’re light, filling, and surprisingly versatile.

Ingredients: 1 cup vegan coconut oil 2 tablespoons honey 2 tablespoons pure vanilla extract 2 tablespoons coconut flour 1 tablespoon coconut sugar 2 tablespoons agave nectar or agave molasses 1 tablespoon pure vanilla syrup 2 tablespoons avocado extract 1 teaspoon salt 1 teaspoon baking soda 1/2 teaspoon baking powder 1 teaspoon pure vanilla 1/4 teaspoon ground cinnamon 1/8 teaspoon ground nutmeg Directions: Preheat oven to 350 degrees Fahrenheit.
In a medium bowl, combine coconut oil, honey, vanilla extract, coconut flour, coconut sugar, agave, and vanilla.
In another medium bowl mix dry ingredients until well combined.
Mix in 1 tablespoon of each avocado extract, salt, baking powder, and ground cinnamon and blend until well blended.
Add remaining avocado extract and mix well.
Add in the avocado and mix until the batter is just combined.
Divide batter evenly among two baking sheets.
Bake for 18-20 minutes, until the edges of the cake begin to turn golden brown and the center comes apart.
Allow to cool for 10 minutes before slicing and serving.
Recipe Notes: You can use this vegan coconut cake frosters as a cake topping if you’re a coconut fan.
They are incredibly easy to make and freeze.
