Heat a pot of water to boil.
Add ginger, lemon juice, coconut oil, salt and curry powder.
Bring to a boil.
Add mango powder and lemon juice.
Add coconut milk to boiling water.
Stir until coconut milk is completely dissolved.
Pour mixture into a bowl and pour into a prepared pan.
Cover and cook for about 30 minutes.
Transfer to a cooling rack and let it cool for about 5 minutes.
You can also freeze it for later.
Use in a salad dresser, as a dip, or serve as a side dish.
