Here’s a great, easy, and delicious cake recipe for the holidays!
What you need to make the Jojo Cookie Dough: 1 cup (2 sticks) unsalted butter, softened (2 tablespoons) and room temperature 1 cup flour 1 cup sugar 1 teaspoon baking powder 1/4 teaspoon salt 1/2 teaspoon ground cinnamon 1/3 cup milk1 cup granulated sugar1/2 cup unsweetened cocoa powder (I used almond flour and vanilla)1 cup milk2 cups (2 stick) unsweeten cocoa powder, plus more for sprinkling1/3 – 1/8 teaspoon salt (I use 3/4 teaspoons)1/4 – 1 cup chocolate chips (or more for more sprinkling)Method:Preheat oven to 350°F (177°C).
Line a large, 9-inch springform pan with parchment paper.
Line a 9-ounce (2.5-cup) cake pan with foil.
Melt butter in a medium-sized saucepan over medium heat.
Add flour and sugar and whisk until combined.
Add baking powder, cinnamon and salt and whisk to combine.
Whisk in milk, cocoa and milk mixture until combined, about 1 minute.
Transfer mixture to prepared pan and bake for 35 minutes.
Cool in pan.
(For a thicker cake, add more milk.)
Remove from pan, cool completely, and cut into 8 pieces.
To assemble: Spread buttercream frosting over cake.
Place chocolate chips in a small bowl.
Top with whipped cream.
Top each piece with chocolate and sprinkle with chocolate chips.
Place in refrigerator until set.
(Remove from fridge and chill overnight.)
To assemble the cake: Place cake in cake pan, drizzle melted buttercream over top.
Sprinkle with cocoa and chocolate chips and sprinkle chocolate over top of cake.
Repeat with remaining cake pieces.
Remove from refrigerator.
To decorate: Spread chocolate chips over cake and sprinkle over chocolate and chocolate chip top.
Sprinkle with remaining chocolate chips, chocolate and buttercream.
Place cake on a cake plate.
Bake for 40 minutes.
Allow cake to cool completely before serving. Enjoy!
